Great list!
I would include Central American rivers as well. The most well known Costa Rican rivers are the Pacuare and the Río Reventazon. There are many others including the Naranjo. Thought I have not rafted in Mexico, it has very good rafting especially in the southern states. Guatemala, Honduras, Belize, and Nicaragua all have rafting as well.
For South American I would include the Río Mendoza outside of Mendoza, Argentina.
